Here is a recent pumpkin recipe we tried out and immediately it became a favorite in our home.

 Recipe yields 6 (4′) Pancakes

 Ingredients

  • 1& 1/2 cups flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/8 tsp. all spice
  • 1/8 tsp. nutmeg
  • 1/8 tsp. ginger
  • 1& 1/2 Tbsp. brown sugar
  • 1/2 (15 oz) can Libby’s pure pumpkin
  • 1 & 1/2 cups buttermilk
  • 2 lg eggs
Directions

  1. In a large bowl sift together flour, salt, baking soda, cinnamon, nutmeg, ginger, and brown sugar, combining well.
  2. Add pumpkin, buttermilk, and eggs to dry ingredients and mix gently.
  3. Heat griddle to medium heat and butter lightly.
  4. Once pan is hot pour in desired size pancake.
  5. Let Pancake cook couple minutes until bubbles are forming, edges are crispy and pancake easily moves around skillet.
  6. Flip and cook for another minute or so.
  7. Repeat, dont forget to butter the pan in between pancakes.

Layer Pancakes with pumpkin butter for extra pumpkin goodness.

I found this recipe for Cream Cheese Whipped Cream that is splendid on top.

Maple Bacon is a perfect protien for this dish.
