Oatmeal, Raisin, Yogurt… It’s a dangerous combination when combined with sugar and egg. Deliciously satisfying enough to pretend you’re “eating healthy” never fear you can always fib and say this recipe only made 40 cookies…

Recipe yields 50 cookies

Ingredients

14 tbsp butter, softened

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

1 egg

1/4 cup canola oil

1 tsp vanilla

1-1/2 cups all-purpose flour

1 tsp baking soda

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp salt

3 cups uncooked oats

3/4 cup raisins

3/4 sup yogurt raisins

1/2 cup walnuts

Preheat oven to 350°F.

 In stand mixer beat butter and sugars on medium speed with paddle until creamy. Add eggs and vanilla and beat well. In separate bowl combine flour, baking soda, cinnamon, nutmeg and salt.

Sift dry ingredients bowl into stand mixer and beat well.

Add oats, raisins, yogurt raisins and walnuts to mixing bowl and mix well.

Drop cookie dough onto silicon mat on cookie sheet with size med cookie scoop.

Bake 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Enjoy!
